I Overengineered a Sausage Using Thermodynamics
Do you really need thermodynamics to make a sausage?
Probably not.
But we used it anyway.
In this experiment, we look at homemade sausage through temperature control, fat stability, protein extraction, and emulsion science.
As meat is ground and mixed, rising temperatures can soften and smear the fat, making it harder to build the firm, juicy texture we want.
So the meat and fat are kept cold — around 4°C — while salt helps extract myofibrillar proteins such as myosin.
Those proteins form a sticky matrix that helps bind water and stabilize fat throughout the sausage.
Cold fat particles.
Protein networks.
Moisture retention.
Heat-induced protein setting.
All for one sausage.
Far more serious than necessary.
Surprisingly useful once you understand it.
