I Overengineered a Lava Cake With Thermodynamics | The Science of a 42…
Outside: fully set.
Inside: still molten at 42°C.
A perfect lava cake is basically a controlled failure.
Bake it too little and it collapses.
Bake it just 2 minutes too long and the center sets completely.
So this time, we overengineered one chocolate lava cake using thermodynamics, heat transfer, temperature gradients, chocolate viscosity, and carryover cooking.
The goal was simple:
Set the outside.
Keep the center liquid.
Cut it open at exactly the right moment.
All this science just to intentionally undercook a cake.
Probably unnecessary.
Still worth it.
